At Ma‘ono, Chef Mark Fuller brings you an aloha spirit straight from Kauai, where he spent summers with his grandparents. His mom’s roots on the island gifted him memories of days in Koke‘e, surrounded by family—mom, dad, grandparents, sister, aunties, and uncles—all sharing his grandmother’s picnic chicken, crispy and packed with a secret seasoning blend that started it all. 

Growing up in the Northwest, he was exposed to a new world of Hawaiian culture and flavors, and those tastes shaped the chicken we serve today. What began as a kid’s love for picnic chicken turned into a lifelong passion. 

Taking a different path from high school landed him in restaurants—bussing tables, then cooking in kitchens—until he made frying chicken his signature craft. 

Today, Ma‘ono is about bringing that same care to you. Our signature sandwich, with its buttermilk-fried goodness, Hawaiian-inspired seasoning shake, and the raved-about bread & butter takuan on a butter toasted King’s Hawaiian bun, is proof.

Our team keeps it “so ono,” serving up crispy, juicy aloha in every bite—just like family would.
